A quick and healthy recipe for anyone looking to eat healthier this year!

Ingredients 2-3 servings
2 avocados
500 gr mushrooms
1 can of kidney beans
1 can of corn
½ red onion (finely chopped)
Pine nuts
5-8 tacos
olive oil
salt
pepper
Paprika spice
Chilli (if necessary)
1 clove of garlic (minced)
100gr goat cheese
For the sauce:
100ml sour cream
100ml natural yogurt
fresh herbs (as required)
1 clove of garlic (minced)
salt
pepper
½ lemon
Preparation:
1. Preheat the oven to 180 degrees.
2. Chop the mushrooms and fry them in a pan with olive oil and half a red onion.
3. Add kidney beans, corn, pine nuts and a clove of garlic and let roast briefly.
4. Now season with salt, pepper, paprika and, if necessary, chilli
5. Fill the tacos, add the goat cheese in small cubes and warm in the oven for 10 minutes.
6. In the meantime, cut the avocados into slices and make the sauce.
7. For the sauce, mix sour cream, natural yoghurt and mix the juice of half a lemon. Add half a chopped clove of garlic, salt, pepper and fresh herbs.
8. Now take the tacos out of the oven. Pour the avocado over it and drizzle with the sauce. If necessary, add fresh herbs, e.g. parsley, and serve.
