Ingredients
1 pack of Rice Noodle Sticks
1 bunch of spring onions
1 bunch of green asparagus
3 cloves of garlic
Sesame oil for the wok
Soy sauce, salt, chilli powder or fresh chillies, fresh coriander
peanuts
1 pack / 2 handfuls of bean sprouts (or bean sprouts)
Preparation
Put the rice noodles in a saucepan with boiling water and let them steep (do not boil, otherwise they will completely disintegrate!). In the meantime, wash the asparagus, cut off the lower ends and cut the asparagus stalks into 3-4 cm pieces. Wash the spring onion and cut into 1-2 cm pieces. Peel the garlic and squeeze it with the flat side of the knife. Let the wok with the sesame oil get hot and fry the cloves of garlic, spring onions and asparagus for about 4-5 minutes until the asparagus is soft but still crisp. Season with a little salt and, depending on the degree of spiciness, with chilli powder or fresh chillies.
Strain the noodles and rinse with cold water, add to the vegetables in the wok and fry them briefly. Season with a strong dash of soy sauce and remove from the heat. Now fold in the washed sprouts and the fresh, finely chopped coriander. Sprinkle with crushed peanuts when serving.
