Spaghetti Bolognese, Wiener schnitzel, burger and goulash. All of these dishes and many others can also be prepared without meat. From now on, we will show you a veggie recipe for the most popular dishes every week so that you can reduce your meat consumption without any major changes. Once tried, you are often surprised at how easy the vegetarian alternative is to prepare - and how tasty it is. First we show you classic Bolognese but instead of minced meat we use red lentils, which are also a good source of protein.

Recipe: Spaghetti Bolognese with Lentils

Ingredients (for 2 people):

- 1 carrot

- 1 piece of celery

- 1 onion

- 50 g of red lentils

- 350 g of pureed tomatoes

- 200 g of spaghetti

- Parmesan

- olive oil

- Pepper

- Salt

- vegetable broth

- oregano

- Shot of red wine

- fresh basil

Preparation:

Cut the onion, carrot and celery into small cubes and roast in a pan with olive oil. Deglaze with red wine and bring to the boil briefly. Add the tomatoes, the soup cube, the salt and the pepper. Wash the lentils well and add the oregano to the sauce and cook for 10 minutes at a low temperature. Finally, season everything to taste again.

Cook the spaghetti in salted water until al dente. Now pour the Bolognese over the drained spaghetti and serve with the parmesan and fresh basil leaves.
