After a friend explained to me that sweet potatoes are so healthy and especially tasty as a soup, I came up with the following recipe. Conclusion: As always, my girlfriend is right!

3 carrots

1 shallot

1 piece of ginger

3 tbsp olive oil

550 g sweet potatoes

250 ml vegetable stock

200 ml coconut milk

Salt, pepper, chili powder

1 tbsp sour cream or crème fraîche per plate


Peel the carrots and shallot and cut into small pieces. Peel the ginger in the same way and chop it into large pieces. Heat the oil in a saucepan and sauté the carrots and shallot in it. Peel and cut the sweet potatoes into small pieces. Put it in the pot. Fry everything not dark, so glassy and deglaze with broth. Simmer for 10 minutes, then add the coconut milk and ginger and simmer. As soon as the vegetables are soft, remove the ginger and puree everything finely.

Season with salt, pepper and chilli (if you want you can also use Tabasco). Serve with pink pepper, a few peanuts and sour cream.

VEGAN TIP: If you leave out the sour cream, you have a vegan soup!
