
Editor-in-chief Lisa from the online magazine VeganBlatt.com revealed a delicious (vegan) breakfast recipe this time: Vanilla pancakes with two kinds of apples.

Ingredients (for 2 people):
1 cup of vanilla soy yogurt (e.g. from Joya)
1 cup wholemeal rice flour
1 teaspoon egg substitute mixed with 2 teaspoons of water
2 teaspoons of baking soda
1 tbsp agave syrup
1 pinch of salt
Coconut oil for baking
Aside from that:
½ cup of vegetable sour cream (e.g. Joya Crèmesse)
2 tbsp agave syrup
1 apple finely sliced on the mandolin
3-4 tbsp pomegranate seeds

Mix the ingredients for the pancakes into a viscous batter.

Heat a little coconut oil in a pan and use a scoop to pour in blobs of dough. When the rim turns brown, turn it over.

Stir the sour cream with the syrup until smooth, spread a spoon on a pancake, place three apple slices on top and then again a pancake until you have a nice tower that you can embellish with the cream and pomegranate seeds. Enjoy some agave syrup on top.
