
A cake without baking? Catrin from the food blog cookingCatrin reveals the simple refrigerator cake recipe. The vanilla and strawberry charlotte is also ideal for Mother's Day.

Ingredients
500 g strawberries or raspberries, 1 packet of ladyfingers
For the cream: 200 g mascarpone, 150 g crème fraîche, 100 g natural yoghurt, 150 g whipped cream, 2 packs of vanilla sugar, 1 pack of Qimiq vanilla, 80 g of icing sugar
Preparation
Put all the ingredients for the cream in a bowl and stir until a firm cream is formed. Line a springform pan with ladyfingers and place ladybirds on the edge with the sugar side facing out (cut off the tips of one side with a knife). Carefully pour the well-mixed vanilla mixture into the biscuit mold and place in the refrigerator for 24 hours. Just before serving, take them out of the fridge, remove the stems from 500 g strawberries and place them on the cream on the charlotte with the tips facing up. Raspberries can also be used if desired. Carefully loosen the springform pan. Tie a wide bow around the biscuit ring and serve it to mom with lots of love and a few flowers!
