Tomato quiche

Ingredients for 6 pieces: 250 g flour, 100 g cold butter (in flakes), 1 egg, salt, 750 g beef tomatoes, 3 anchovy fillets, 200 g mozzarella, pepper, 1 teaspoon dry. Oregano, 1/2 teaspoon herbs of Provence, 2 tablespoons olive oil, 2 stalks of basil
The preparation:
Crumble the flour with the butter flakes, the egg and a pinch of salt
Knead quickly with 2 tablespoons of cold water to form the dough, cover and cool
Blanch the tomatoes, peel them, squeeze out the liquid and cut into small pieces
Halve the anchovies lengthways and crossways, cut the mozzarella into slices
Preheat the oven to 200 °
Roll out the dough thinly, line the mold with it and shape the edge. Pre-bake the dough for 10 minutes
Place 2 pieces of anchovy on top of the dough
Spread tomatoes and mozzarella on top
Sprinkle with pepper, dried herbs and salt, drizzle with oil
