She uses quinoa as the basic ingredient for the dough. The grain contains many valuable ingredients: It is rich in calcium, magnesium, iron and zinc and contains various B vitamins and a lot of vitamin E. And it only provides good, unsaturated fatty acids.

Recipe for a quinoa pizza with avocado cocoa cream and wild berries (for 2 people):

You need this:

For the quinoa batter:

  • 150 g uncooked quinoa
  • 50 ml of water
  • ½ teaspoon salt
  • 1 teaspoon Baking powder
  • A few tablespoons of quinoa or chickpea flour and / or quinoa pops

For the avocado cocoa cream

  • 2 small, ripe avocados
  • 4 tbsp cocoa powder
  • 3-4 tbsp maple syrup

For covering

A handful of raspberries, blueberries, blackberries and strawberries

For decoration

  • Coconut flakes

That's how it works:

Soak the quinoa in a bowl of water the night before (or at least six hours).

Preheat the oven to 220 ° C top / bottom heat (200 ° C convection). Rinse the quinoa well and mix in a food processor or mixer with water, baking powder, salt and a little quinoa or chickpea flour for about 2 minutes. If necessary, you can also stir in a few quinoa pops. The dough should be slightly creamy - so add enough flour that the dough is not too runny.

Spread the dough evenly in a round shape on a baking sheet lined with baking paper and bake in the preheated oven for about 15-20 minutes. Now spread or cover with the desired ingredients.

For the cream, core the avocados and put the pulp in a blender jar. Add cocoa and maple syrup or coconut blossom sugar and puree with a hand blender.

Brush the dough with the avocado cocoa cream and garnish with the berries. Spread the coconut flakes, mint and edible flowers decoratively on top.
