The WOMAN summer kitchen continues! Every week we present you the favorite recipe of a local food blogger. This time it's Martina from food-stories.at - the Upper Austrian focuses on healthy vegetarian food. Enjoyment should definitely not be neglected! Her motto: "Eating should be fun!" Look forward to their delicious tomato, pepper and apricot salsa with fresh herbs and toasted white bread.

Salsa with toasted white bread
You need this:
- 2 tomatoes
- 3-4 apricots
- 1 yellow pepper
- 1 red onion
- White bread
- garlic
- fresh herbs of the season
- 3 tbsp lemon juice
- 2 tbsp olive oil
- 1/2 teaspoon salt, pepper & chilli
- optional: 1 egg per person, parmesan
That's how it's done:
The onion and herbs are finely chopped. Dice the tomatoes, apricots and peppers. Mix everything and mix with the lemon juice. Add olive oil, salt, pepper and chilli. Stir well and let it steep.
In the meantime, the bread is cut into slices and roasted in olive oil until golden brown. After frying, the bread slices are rubbed with a peeled and halved clove of garlic. If you rub the cut surface of the garlic into the bread, the intense aroma of the tuber is wonderfully transferred to the bread.
Then arrange the bread on a plate and top with the salsa and sprinkle with parmesan slicer if you like.
A little tip: eat a fried egg with it! The egg goes wonderfully with salsa bread and completes the dish to a complete meal. By the way, salsa is not only suitable as a grill side dish. It goes well with cheese or, as in this recipe, on toasted bread.
