The WOMAN summer kitchen continues! Every week we present you the favorite recipe of a local food blogger. This time it's Stefanie from stefaniegoldmarie.com - on her lifestyle blog, the Salzburg native writes about healthy eating and posts her recipes, among other things. Pasta salad with halloumi and citrus dressing

You need this:

For the salad:

  • 100 g halloumi
  • 75 g whole grain penne (dry weight)
  • 150 g cherry tomatoes
  • 1 handful of baby spinach or rocket
  • 2-3 sun-dried tomatoes
  • Pasta seasoning (or just any Italian seasoning)
  • fresh basil
  • 1 tbsp pine nuts
  • some olive oil for the pan
  • salt

For the dressing:

  • 1 fresh clove of garlic
  • 2 tbsp white balsamic vinegar
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil

That's how it's done:

Cooking pasta. Cut the halloumi into pieces approx. 1 cm thick and brush with olive oil. Fry in a pan for about two minutes on each side. In the meantime, cut the cherry and dried tomatoes into small pieces. For the dressing, squeeze the garlic clove and mix it with the vinegar, oil, lemon juice and a little salt. Put everything in a deep plate, use the kernels and the basil as a topping and enjoy.
