Herbal plucked bread
for a loaf:
For the dough:
- 300 g of water
- 2 tbsp olive oil
- 500 g wheat flour 700
- 10 g of salt
- 4 g germ
For the fullness:
- 50 g butter
- 1 bunch of mixed herbs of the season (e.g. lovage, basil, oregano, parsley, chives, …)
- salt
- pepper
That's how it works:
Prepare a yeast dough from the ingredients indicated and cover it and let it rise for about 30 minutes. In the meantime, melt the butter a little and finely chop the herbs. Mix everything well and, depending on your taste, season with salt and pepper. Put in a cool place so that everything can solidify again.
Roll out the dough into a square (approx. 30 x 30 cm). Spread the filling on the dough and then cut it into 16 parts. Arrange the individual parts in a small cake form (Ø approx. 15 cm) (see in the video then;-) until all parts are used up. Bake the bread in the preheated oven at 220 degrees hot air for about 25 minutes with plenty of steam.
