Sweet bruschetta with berry jam
You need this:
- 8 slices of milk bread
- 2 tbsp butter
- 2 tbsp honey
- 10-15 tbsp berry jam
- fresh berries
- fresh mint
For the yoghurt curd cheese spread:
- 200 g curd cheese
- 100 g natural yogurt
- 1 tbsp honey
- some cinnamon
For the jam
- 600 g fresh strawberries
- 200 g fresh blueberries
- 200 g fresh raspberries
- the juice of half a lemon
- 500 g preserving sugar 2: 1 (alternatively 1 kg, instead 1: 1)
That's how it's done:
Curd cheese spread: Mix all ingredients together until smooth.
Jam: Wash the berries and then finely puree them. Bring to the boil together with the preserving sugar in a large saucepan and let simmer for four to five minutes while stirring. Make a gel test. Pour the hot mass into distilled glasses, close and place on the lid. Let cool down. Tip: The jam can be refined with cinnamon, vanilla, lemon, orange or lime peel.
Sweet bruschetta: Melt the butter in a pan, caramelize with honey and briefly toast the milk bread in it. Then spread the slices of milk bread with curd cheese and yoghurt spread and top with one to two tablespoons of jam, fresh berries, mint and a little honey. Bon Appetit!
