Lena and Mate discovered the hip food store "Budapest Bägels" in Hungary and brought the concept with them to Vienna. They tell us the recipe for their bestseller, the "Burrata-Bägel".
The restaurant is located in the second district of Vienna, near the Danube Canal. They are served in the "Budapest Bägels" - the name says it all: bagels. Salty, sweet, vegetarian, vegan - everything is available here. And for at home. Because for us, the operators Lena and Mate make an exception and present us the recipe of the sandwich that they sell most often: the "Burrata Bägel".
What you need (for one serving):
- 1 piece of bagel
- 1 piece of burrata
- 2 tbsp basil pesto
- 100g cherry tomatoes
- 5 tbsp olive oil
- 3-4 basil leaves
- Chilli, balsalmico, salt and pepper
That's how it works:
Wash the cherry tomatoes and season with olive oil, salt, pepper and chilli. In the oven for about 15-20 minutes at 220 degrees (top and bottom heat), until the tomatoes are tender.
In the meantime, cut the bagel, toast briefly and distribute the pesto well on both sides. As soon as the oven tomatoes have cooled down, place them on the bagel, top with the burrata and garnish with balsamic vinegar and basil.
Tip: Leftover bagels can be used to make crispy bagel chips. Simply cut the bagel into thin slices, season with salt, pepper and olive oil and bake in the oven at 200 degrees for 10 minutes.
