This vegan cake classic is the best proof that a purely plant-based (sweets) enjoyment is anything but complicated or even joyless. This recipe for our fluffy apple and oat cake is enough for eight to ten people and is super easy! Have fun baking!
You need this:
For the dough:
- 150 g fine oat flakes
- 250 g flour
- 100 g of sugar
- 1 pinch of cinnamon
- 1/2 teaspoon salt
- 200 g plant-based butter (melted)
For the filling:
- 4 peeled apples
- 100 g of sugar
- 400 g black currants
- 1.5 tbsp vanilla pudding powder
Aside from that:
- 1 tbsp pudding powder
- 2 teaspoons of powdered sugar (sifted)
That's how it's done:
Mix all the ingredients for the dough, stir into a crumbly dough. Press three quarters of the dough into a springform pan lined with baking paper. For the filling, cut the apples into small pieces and mix with the sugar, currants and pudding powder. Spread the rest of the custard powder on the bottom. Then put the fruit filling in the mold and crumble the rest of the batter over it. Bake the cake in the oven at 175 ° for approx. 50 minutes. Let cool and sprinkle with icing sugar.
